Sweet Potatoes in Thick Syrup Recipe (Pengat)
Chinese New Year Delicacies

 

A Chap Goh Meh Straits-born Chinese Specialty

Ingredients


680 g/1 1/2 lb
680 g/1 1/2 lb

680 ml/24 fl oz

sweet potatoes (yellow & orange varieties)
yams
bananas (preferably pisang raja)
Palm sugar (gula melaka)
water for palm sugar
grated coconut
water for syrup
gula melaka for syrup
pandan leaves

 

 

 

 

Method:

  1. Peel sweet potatoes and yams and cut into bite size wedges. Steam until soft.

  2. Peel bananas and slice slantwise to thickness of 1.2 cm (1/2 inch)

  3. Prepare palm sugar in 300 ml/10 fl oz water. Return to fire and add bananas. Stir until soft.

  4. Prepare thick coconut milk and 680 ml/24 fl oz thin coconut milk.

  5. For syrup, boil thin coconut milk with pandan leaves. Pour in bananas and palm sugar. Add sweet potatoes and yams and stir well. Add thick coconut and remove from fire at the first sign of boiling again. Discard pandan leaves. Stir and serve hot or refrigerate before serving. Do not add ice cubes.

Note : Chap Goh Meh is the fifteenth and last day of Chinese New Year.
