 White Glutinous Rice Cake Recipe (Bee Ko)

 

A Cheng Beng Specialty. Cheng Beng resembles All Soul's Day. It usually falls in the 5th month of the Chinese calendar.

Ingredients

905 g/2 lb
905 g/2 lb
455 ml/16 fl oz

115 g/4 oz
1

glutinous rice grains
grated coconut
water
pinch of salt
granulated sugar
large banana leaf

 

 

 

 

Method:

  1. Pick out plain rice grains and other impurities which are often mixed with glutinous rice. Soak overnight.

  2. Prepare grated coconut to obtain thick coconut milk and 455 ml/16 fl oz thin coconut milk. Add a pinch of salt.

  3. Boil thin coconut milk. Add sugar and rice, a little at a time and keep stirring.

  4. Add thick coconut milk, a little at a time and keep stirring until ricer is dry and sticky.

  5. Scoop onto aluminum cake tray which has been lined with boiled banana leaf. Use scrap of leaf to press and firm rice and to smooth surface.

  6. Leaves to set for 5-6 hours. Cut into diamond shape pieces pieces and serve.
