Yellow Glutinous Rice (Nasi Kunyit) Recipe

A Straits-born Chinese Specialty for an infant's full moon (month) celebration

Ingredients


905 g/2 lb
60 g/2 oz

glutinous rice grains
dried turmeric
lime (limau kesturi)
peppercorns
grated coconut
salt

 

 

Method

  1. Pick out plain rice grains and other impurities which are often mixed with glutinous rice grains. Soak in water the level of which should be 2.5 cm (1 inch) above the surface of the rice.

  2. Pound turmeric coarsely and tie it in a piece of voile.

  3. Bury bundle in the middle of the rice grains. Leave for 1 hour. Stir-the rice for even distribution of the yellow color. Place bundle in the middle again and soak overnight.

  4. The rice should have absorbed the yellow coloring. Drain off water and squeeze 1 lime over rice grains. Mix in peppercorns. Steam until rice is soft.

  5. Prepare grated coconut to obtain thick coconut milk and add salt.

  6. Sprinkle thick coconut milk over yellow rice and stir for even distribution. Steam again for 10 minutes.

  7. Serve with Chicken curry. See recipe under section for Nyonya cooking.
