Chicken Giblets with Assortments Recipe

Ingredients:

Spices:
1/2 tsp

Seasoning:
2 tbsp
2 tbsp
1/4 tsp
1 tsp
2 cup
 

chicken
chicken giblets
gingkoes (remove shells and stalks)
pickled mustard green
peanuts (soak until tender and with skin removed)
wood's ear (soak until tender)
pig skin (soak until tender and cut into pieces)
fried bean curd puff
celery
garlic
red chilies
star aniseeds


five-spiced powder
Sichuan peppercorn powder


soy sauce
oyster sauce
salt
granulated sugar
stock

Method :

  1. Wash chicken and chicken giblets and cut into pieces. Mix with pinch of caltrop starch and oil. Leaves for a while. Deep fry in warm oil with gingkoes. Leaves for later use.

  2. Soak pickled mustard green until tender and cut into pieces. Stir fry for a while. Add pinch of sugar and oil. Stir well and dish up.

  3. Heat 2 tbsp oil. Sauté crushed garlic and red chili. Add spices and other ingredients. Stir until the ingredients are cooked.  Add seasoning and star aniseeds. Bring the ingredients to the boil. Then add chicken pieces, chicken giblets and gingkoes. Simmer until the amount of sauce is suitable. Then add celery and stir well. Dish up and serve.
