Deep Fried Eel with Red Pickled Grains Recipe

Ingredients:

Marinade:
3 tbsp
2 tbsp
1 tsp
1 tsp

 

Batter:
2
4 tbsp
 

river eel (about 640 g)
salted pepper


soy sauce
red pickled grains
wine
granulated sugar
pinch of pepper
dash of sesame oil


egg whites
flour

Method :

  1. Put eel into boiling water to remove sticky substance on surface. Wash and wipe dry. Cut along the middle. Then cut into thick pieces as large as the fingertip.

  2. Add marinade into the eel pieces. Stir well and marinate for 1 hour. Leaves for later use.

  3. Whisk egg whites. Sift flour to make batter.

  4. Heat 1/2 wok of oil to the boil. Put the marinated eel pieces into the batter. Deep fry over medium heat until the surface becomes crispy. Drain with the skimmer.

  5. Put eel pieces on a plate. Add salted pepper. Serve.
