Deep Fried Longjing Tea Leaves with Shrimps Recipe

Ingredients:

640 g
5 g/ 1 tsp
1 sprig

Marinade for shrimps:
1 tsp
1 tsp
1/4 tsp

fresh shrimps, about 260g without shell
Longjing tea leaves
spring onion, cut into shreds


caltrop starch
egg white
chicken powder

Method :

  1. Wash shrimps. Wipe dry with a cloth. Mix well with marinade and marinate for 2 hours in refrigerator. Leaves for later use.

  2. Soak Longjing tea leaves in boiling water for a while. Remove and drain. Sprinkle pinch of pepper salt. Mix well. Wipe dry with a cloth after 15 minutes. Leave for later use.

  3. Heat oil. Add Longjing tea leaves and deep fry until crispy. Remove and drain.

  4. Reheat the oil. Pour in shrimps and deep fry for a while. Remove and drain.

  5. Heat wok. Add 1 tbsp oil. Return shrimps to wok again. Add the tea leaves. Stir well and dish up. decorate with spring onion shreds. Serve.
