Deep Fried Yellow Croaker with Pork Recipe

Ingredients:

120 g
160 g
1 clove

Marinade for fish:
2 slices
2 sprigs

Seasoning:
1 tbsp
1 tbsp
1 tsp
1 tsp


1 1/4 tsp
8 tbsp
 

yellow croaker, about 960 g
shredded pork
shredded vegetable
garlic


ginger
spring onion
star aniseeds
salt
ginger wine


soy sauce
black vinegar
brown sugar
chicken powder
dash of sesame oil
pinch of pepper
1 1/4 tsp caltrop starch
water

Method :

  1. Cut yellow croaker and wash. make 5 cuts on each side. Mix with marinade and marinate for 1 hour.

  2. Mix pork shreds with pinch of caltrop starch and dash of oil.

  3. Heat wok with 6 tbsp oil. Deep fry both sides of fish until golden. Remove.

  4. Add 2 tbsp oil. Sauté crushed garlic. Stir fry pork shred until they are cooked. Then add vegetable shreds and stir fry until the ingredients are cooked. Stir in seasoning. Pour over the yellow croaker. Dish up and serve.
