Spiced Pork in Suzhou Style Recipe

Ingredients:

640 g
2 sprigs

Spice:
2 slices

Seasoning:
1/2 cup
70 g
1 tsp
1 tsp

Sauce:
1 tsp
2 tbsp

 

lean pig's shank
spring onion (sectioned)
ginger
chilies


angelica dehurica (Bai Zhi)
cassia bark
radix liquiritiae (liquorices)
cardamom
cumin
cloves
piece dried tangerine peel


soy sauce
rock sugar
chicken powder
sesame oil


caltrop starch
water

Method :

  1. Clean pig's shank. Scald and rinse in cold water. Drain for use later.

  2. Heat 2 tbsp oil . Sauté spring onion sections, ginger slices and red chilies until they are fragrant. Sizzle wine. Add pig's shank to the wok and cook for a while. Pour in a suitable amount of water to cover the pig's shank. Then add spices and seasoning. Braise over low heat for 1 1/2 hours. The pig's shank is ready when the meat become tender.

  3. Cut the pig's shank into thin slices when it becomes cool. Bring 3/4 cup of the pig's shank sauce to the boil. Stir in sauce and cook until the mixture becomes thickened. Pour over the meat and serve.
