Steamed Egg Recipe
(Zheng Jidan)

Chinese Recipes

 

Dry the spinach leaves thoroughly after rising them.

Ingredients

250ml/8 fl oz
1 tsp
2 tsp
50 g/2 oz
50 g/2 oz


To garnish:

1 tbsp
1 tsp
  

eggs, beaten
hot water
salt
medium or dry sherry
fresh spinach leaves
peeled prawns


soy sauce
sesame seed oil

Method:

  1. Put the eggs in a heatproof bowl, add the water, salt and sherry and stir well.

  2. Arrange the spinach, ham and prawns (shrimp) on top of the egg mixture, then lower the uncovered bowl into a large pan of boiling water.

  3. Cover the pan, lower the heat so the water in the pan is just simmering and steam the gently for 20 minutes. Sprinkle with the soy sauce and sesame seed oil. Serve hot.
