Steamed Green Crab with Glutinous Rice Recipe

Ingredients:

Seasoning:
1 tsp
1 tsp
1 1/2 tsp
1/8 tsp
1/4 tsp
1/2 cup
 

glutinous rice
taro
bamboo shoots
dried shrimps
dried pork
dried black mushrooms
green crab
shallot, cut into small dice
ginger, cut into small dice
spring onion, cut into dice
celery, cut into dice


soy sauce
Shaoxing wine
oyster sauce
salt
granulated sugar
stock

Method :

  1. Wash glutinous rice and soak in water for 2 hours. Drain.

  2. Cut taro into dice. Deep fry in oil fop a while. Remove and drain.

  3. Remove shell of bamboo shoots. Cut the bamboo shoots, dried pork, dried Chinese pork sausage and black mushrooms into dice. Soak dried shrimps until tender.

  4. Heat oil. Sauté shallot until fragrant. Add the ingredients of (2) & (3). Stir fry until all the ingredients are cooked. Dish up.

  5. Heat 2 tbsp oil. Sauté ginger shreds until fragrant. Add glutinous rice and stir well. Pour in a small amount of stock each time. Keep stirring when adding the stock. Then cover the wok with lid to braise the ingredients for a while. Repeat this step for several times until the glutinous rice is cooked. Then add all the ingredients and seasoning. Stir well. Add spring onion and celery dice. Put all the glutinous rice mixture into a steaming basket. Put the green crab on the rice mixture. Put the crab back into shape. Steam over high heat for 10 minutes. Dish up and serve.
