Stewed Fish Head Recipe

Ingredients:

Marinade for pork:
1/2 tsp
1 tsp
1 tsp

Thickening:
1 tsp
2 tbsp

Seasoning:
4 tbsp
1 tbsp
1/2 tsp
1/2 tsp
1 tsp


2 cups

 

fish head (about 960 g)
onion
red chili
garlic
ginger
minced pork
broad bean paste
Shaoxing wine
spring onion


caltrop starch
oil
water


caltrop starch
water


soy sauce
oyster sauce
salt
granulated sugar
chicken powder
dash of sesame oil
pinch of pepper
water

Method :

  1. Wash fish head and drain. Fry with oil until cooked and  both sides become golden brown. Leave for later use.

  2. Cut onion, red chili, garlic and ginger into small dice. Mix minced pork with marinade.

  3. Heat wok with 2 tbsp oil. Sauté onion, red chili, garlic and ginger. Add pork and stir well. Sizzle wine. Then add broad bean paste and stir well. Pour in seasoning and bring to the boil. Add fish head. Braise over high heat for 20 minutes until 1/2 cup of sauce is left. Add thickening and dish up. Put spring onion on top and serve.
