Stir Fried Chicken Dice and Walnuts in Sauce Recipe

Ingredients:

240 g
80 g
1 clove
1 tsp
1 tsp

Marinade:
1/2 tsp
1 tsp
1 tsp


1/2 tsp

Sauce:
3 tbsp
1 tbsp
1 tbsp

 

chicken breast
walnuts (with shells and skin removed)
garlic (crushed)
crushed ginger
Shaoxing wine


chicken powder
caltrop starch
egg white
dash of sesame oil
pinch of pepper
water


sweet bean paste
broad bean paste
icing sugar

Method :

  1. Wash chicken and cut into dice. Mix 1 tsp soda powder with 1/4 cup of water. Soak chicken dice in the soda mixture for 30 minutes. Rinse and drain. Add marinade. Marinate for 20 minutes. Deep fry in warm oil.

  2. Soak walnuts in boiling water for 20 minutes. Remove and drain. Deep fry in warm oil until crispy and float on the surface. Drain and set aside for later use.

  3. Heat oil. Sauté garlic and ginger until fragrant. Add sauce and stir fry until fragrant. Sizzle wine. Stir in chicken dice. Add walnuts and stir well. Dish up.
