Stir Fried Crab Meat and Shrimps with Eggs Recipe

green crabs (about
640 g)
shelled shrimps
duck eggs (whisked)
Chinese parsley
salt
granulated sugar
pinch of pepper
stock
caltrop starch
water
Method :
Steam the crabs
until they are cooked. Removed meat.
Wash shelled shrimps. Wipe dry
and cut into small dice. Deep fry in warm oil.
Heat 2 tbsp oil. Add shrimp dice
and crab meat. Add seasoning and bring to the
boil. Stir in whisked egg. Then add thickening.
Stir fry the mixture. Remove with a skimmer.
Transfer to a deep plate.
Sprinkle dash of Shaoxing wine
and pinch of pepper. Place parsley on top. Serve
hot.
