Stir Fried Eel with Chives and Garlic Recipe

Ingredients:

640 g
80 g
2 cloves
1 tsp

Marinade:

1/4 tsp
1 tsp
1 tsp

Seasoning:
1/3 tsp
2 tbsp
1 tsp
1 1/2 tsp
1/4 tsp
1 1/2 tsp
 

yellow eel
yellow Chinese chives, cut into section
garlic, crushed
crushed ginger


pinch of pepper
salt
caltrop starch
oil


cup water
soy sauce
sesame oil
granulated sugar
chicken powder
caltrop starch

 

Method :

  1. Pour some hot water to remove the sticky substance of eel.

  2. Cut the eel into 1 1/2 inches long pieces. Mix with marinade and marinate for a while. Deep fry in warm oil. Leaves for later use.

  3. Heat wok. Add 3 tbsp oil. Sauté crushed ginger until fragrant. Add eel. Stir fry over high heat  for a while. Add chives and stir in seasoning.  Stir fry until the ingredients are cooked. Transfer the ingredients to a plate and make a hole in the centre. Put crushed garlic in the hole.

  4. Heat 2 tbsp oil and 1 tsp sesame oil. Pour the mixture over the crushed garlic. Sprinkle with pinch of pepper before serving.
