dried scallop
imitation crab fillet, cut into sections
egg whites
egg yolk
Chinese parsley
Zhejiang vinegar
water
salt
granulated sugar
chicken powder
wine
caltrop starch
Method :
Soak the dried
scallop with 1/4 cup water. Soak until tender
and tear into shreds. Mix the soaking water with
the seasoning. Leaves for later use.
Whisk egg white. Add dried
scallop and imitation crab fillet. Mix well.
Leave for later use.
Heat 4 tbsp oil.
Pour in the mixture until the ingredients are
set. Drain.
Bring seasoning
mixture to boil. Add egg white and braise the
ingredients for a while. Add egg yolk in the
centre. Decorate with parsley. Stir well and
serve with Zhejiang vinegar.
