Yellow Croaker and Bird's Nest Chowder Recipe

Ingredients:

120 g
320 g
1 can
9 cups
4 slices
2 sprigs
1

For stewing bird's nest:
2 slices
2 sprigs
 


Thickening:
7 tbsp
7 tbsp

Seasoning:

 

bird's nest (soaked)
yellow croaker
mashed corn
stock
ginger
spring onion (cut into sections)
egg white


ginger
spring onion
water (just enough to cover
the bird's nest)


water chestnut powder
water (mix well)

pinch of salt
pinch of pepper

Method :

  1. Wash yellow croaker and drain. Put onto a plate. Add ginger, spring onion and oil. Steam for 10 minutes. Remove bones from the yellow croaker. Leave for later use.

  2. Heat 1 tbsp oil. Sauté ginger and spring onion. Sizzle wine. Pour in water and bring to the boil. Add bird's nest. Bring to the boil again. Stew for 15 minutes. Discard ginger and spring onion. Rinse bird's nest in cold water. Drain and leave for later use.

  3. Bring the stock to the boil. Add bird's nest and mashed corn. Cook over low heat for 15 minutes. Add seasoning and thickening. Then add yellow croaker and bring to the boil again. Stir in egg white before serving.
