Chinese Style Chopped Chicken

 

Recipes for Chinese chicken dishes often say: " cut chicken into pieces" For Chinese dishes, chicken is cut into smaller pieces than for most other recipes. Here's the way to cut the chicken. A cleaver is good for this, or use a sharp knife.
 

1. Stand chicken breast side up. With cleaver or sharp knife, cut right through the chicken, just a little to side of breast bone. Chicken is now divided into two equal pieces.

2. Cut right across both pieces of chicken. You now have two pieces each of breast-and-wing, and two of leg-and-thigh.

3. Now cut between each wing and breast (find joint, cut through this, so the pieces is cut easily and cleanly). Cut or chop between each leg and thigh. You now have eight pieces.

4. Cut each chicken wing into two pieces. Chop each leg into three pieces. Chop each breast into three pieces. Chop each thigh into three pieces. You will now have 22 pieces of chicken and be ready to prepare a host of Chinese dishes.
