How to prepare peanuts like the ones served in restaurants

Buy a large, shelled and skinned raw peanuts. Soak them in water for 25-30 minutes. Put them in a pan of water and bring to a boil, then simmer for 10-15 minutes. Drain peanuts well. Put them on a baking tray and use paper kitchen towels to dab dry completely.

Deep-fry the peanuts in oil over a medium heat until they turn lightly golden brown. (Make sure the oil is not too hot when deep-frying.) Drain the nuts from the oil and add a good dash of salt.
