Preparing Rice & Cellophane noodles

Method:

Preparing rice noodles

  1. Rice noodles need only to be soaked in hot water for a few minutes to soften them.

  2. Add the noodles to a large bowl of water that has been recently boiled and leave for 5 -10 minutes, or until softened, stirring occasionally to separate the strands as they soften.

Preparing cellophane noodles

  1. Cellophane noodles are never served on their own, but always used as an ingredient in a dish. Soak them in hot or warm water for 10 - 15 minutes to soften them.

  2. When they are soft, use a pair of scissors or a sharp knife to chop the noodles into shorter strands for easier handling.
