Soak the abalone in water for 30 minutes then remove and boil with sufficient fresh water to cover the abalone for 30 minutes. Remove from the hot water and clean the abalone. Boil again with fresh water for 1 to 1 1/2 hours.Transfer the abalone together with the boiled liquid to a pressure cooker and pressure cook for half an hour. Leave abalone in the pressure cooker for about 4 to 5 minutes. Retain the abalone stock to be used later in your cooking. |
