Prepare Properly - Cook in Seconds

 
Food stir-frying in a wok cooks in a flash - provided you have already chopped all the ingredients into slices, cubes or strips of equal size. It is important that everything should be the same size, so that all the food cooks evenly and in the same time. It is especially important that you have really prepared everything thoroughly before you start to cook.

The food cooks so quickly that you will have no time for chopping; in any case, you will not have a hand free while you are stir-frying.

Begin with ingredients that need marinating. While the fish or meat is soaking up the marinade, you can cook the rice or noodles or soak the mushrooms. Only then should you clean and chop the other ingredients and get ready all the spices and utensils you will require.
