Coconut Tarts Recipe

Ingredients:

100 g
2 tbsp

90 g
60 ml
30 g

1 tbsp

1/2 tsp
1/4 tsp

butter
sugar
egg
plain flour, sifted with 1/4 tsp salt
sugar
water
butter
egg, beaten
milk
desiccated coconut
vanilla essence
baking powder
red cherries, cut into small pieces for decoration

Method:

  1. For the pastry, cream butter, sugar and egg till well-combined. Add the four and mix into a soft dough. Leave to rest for 15 minutes.

  2. For the filling, put sugar, water and butter into a small pot, stir and bring to boil. Remove from heat, leave to cool before mixing in remaining ingredients.

  3. Roll pastry into 3 mm thick, cut into circles slightly bigger than the tart moulds. Line tart moulds with pastry and press well.

  4. Place filling into the prepared mould till three-quarters full.

  5. Bake in a preheated oven at 180 deg C till golden brown for about 25 - 30 minutes.

  6. Remove and leave to cool before serving.

Serves 8 - 10.
