A few drops

plain flour, sifted
butter
castor sugar
beaten egg
castor sugar mixed with 120 ml hot water, stir to dissolve & cool
eggs, beaten lightly

Method:

  1. For the pastry, combine butter, castor sugar and egg. Mix till sugar has dissolved. Slowly fold in flour to form a dough. Rest for 15 minutes.

  2. For the filling, mix the remaining ingredients together and strain.

  3. Roll pastry into 3 mm thick and cut into circles slightly bigger than the tart moulds.

  4. Line egg tart moulds with pastry and press well.

  5. Pour filling into the prepared moulds till three-quarters full.

  6. Bake in a preheated oven at 180 deg C till cooked and golden brown for about 25 - 30 minutes. Do not over-bake, otherwise the filling will puff up.

  7. Remove from moulds and serve hot or cold.

Serves 6 - 8.
