Ham Tan Soh (Salted Egg Biscuits) Recipe

Ingredients:

240 g
1/2 tsp
100 g
90 ml
120 g
150 g

For top pastry:
60 g
60 g
1 1/2
1/2
A few drop

1 tbsp

high protein flour, sifted with 3 tbsp custard powder
salt
shortening
water
plain flour
shortening


butter/ shortening
castor sugar
eggs
vanilla
yellow coloring
plain flour
custard powder
lotus paste, divide into 16 portions
salted egg yolks, divide into 16 portions
egg, beaten (to glaze)
 

 

Method:

  1. For the pastry, mix Ingredients A and knead till smooth (dough A). Rest for 15 minutes. Mix plain flour and shortening till just combined (dough B). Divide both into 16 portions.

  2. Wrap dough B with dough A and roll into 3 mm thick. Roll up like a Swiss roll. Rest for 30 minutes. Roll into small circles to line tart moulds.

  3. For the top pastry, mix all ingredients till well combined. Divide into 16 portions.

  4. For the filling, wrap one portion of salted egg yolk with one portion of lotus paste and form into a ball.

  5. Place one portion of filling into the prepared mould. Cover filing with one portion of top pastry. Press the edges neatly with the handle of a teaspoon. Glaze with beaten egg and bake at 200 deg. C till golden brown.

Serves 10 - 12.
