Shanghainese Dumpling Recipe
 Dim Sum Cuisines Recipes

 

 

 

 

Ingredients:

450 g
150 g
400 g / 50 pcs
100 g

Seasoning:
10 g / 1 tbsp
5 g / 1 tsp
5 g / 1/2 tbsp
3 g / 1/2 tsp
3 g / 1/2 tsp
10 g / 1 tbsp
 

Optional Ingredients:

 

Sauce:
10 g / 1 tbsp
80 g / 6
10 g / 1/2 thumb size
30 g / 3 tbsp
125 ml / 1/2 cup

 

Chinese cabbage
prawn meat, chopped finely
wanton skin or "soi kau" skin
meat (chicken without skin or beef without fat), chopped finely

soy sauce
sesame oil
oyster sauce
pepper
salt
ginger juice (20 g ginger, pounded and mix with 2 tbsp of water

Black mushroom and / or bean curd, sliced thinly and fried with small amount of oil in a non-stick pan.

boiled water
 

Method:

  1. Blanch cabbage until soft and slice thinly.

  2. Mix meat, cabbage and prawn with seasoning.

  3. Scoop 1 tsp of the mixed ingredients onto the wanton skin. Apply a small amount of water at the side of the wanton skin, fold and shape as dumpling.

  4. Boil water in a pot and cook dumplings for 3 - 5 minutes.

  5. Scoop dumplings and place on a plate.

  6. Serve with sauce.

10 dumplings/ Serves 5

Notes: The dumplings can also be deep fried in hot oil for 15 seconds.
