Siew Pau (Baked Pau) Recipe

Ingredients A:

high protein flour
shortening
castor sugar
water
plain flour
shortening


diced chicken
diced prawn
salt
sugar
Dash of pepper and sesame oil
oil
big onion, diced
baked beans
dark Soya sauce
corn flour mixed with 1 tbsp water for thickening
egg, beaten (for glaze)

 

Method:

  1. For the pastry, mix and knead Ingredients A till smooth. Divide into 20 portions (dough A). Mix the plain flour and shortening till just combined. Divide into 20 portions (dough B). Wrap dough B with dough A and form into a ball. Roll into 3 mm thick and roll up like a Swiss roll. Roll into 3mm thick again and roll up like a Swiss roll again. Rest for 30 minutes.

  2. For the filling, mixed diced chicken and diced prawn with 1/2 tsp each of salt and sugar, dash of pepper and sesame oil. Heat oil and sauté onion till fragrant. Add diced chicken and prawn and stir fry till aromatic. Add baked beans, dark soy sauce and cook well. Thicken with corn flour mixture. Taste and leave to cool. Divide into 20 portions.

  3. Roll pastry onto 3 mm thick circle, wrap up one portion of filling and pinch into pau shape. Arrange on baking tray and brush with beaten egg.

  4. Bake in a pre-heated oven at 425 deg F/210 deg C for 20-30 minutes till golden brown.

Serves 10-12.
