Method:

Mix flour, sugar
and salt.

Beat egg and blend with melted
butter and milk.

Make a hollow in the flour and
pour in mixture, a little at a time. Mix with
flour to form a smooth batter. Allow to leaven
for 2 - 3 hours.

Grind finely roasted groundnuts.

Pound roasted sesame seeds a
little to enhance flavor.

Leave butter in room temperature
to soften.

Heat small, flat pan. Over high
fire, spread 1 ladleful batter evenly to cover
whole surface. When crumpet is almost done,
sprinkle 2 tsp each of groundnuts, sesame seeds
and sugar.

Place 1 tsp butter in centre and
cover for 2 - 3 minutes.

Remove from pan and fold into 2.
Repeat until all batter is used up.
