Ban Chian Koay Recipe
 Groundnut Crumpets - General Favorite

 

 

 

 

Ingredients:

Main:
225 g/8 oz
1 tbsp

1
2 tbsp
340 ml/ 12 fl oz

Topping:
115 g/ 4 oz
60 g/ 2 oz
115 g/ 4 oz
60 g/ 2 oz
 


self-raising flour
sugar
pinch of salt
egg
melted butter
milk


roasted groundnuts
roasted sesame seeds
butter at hand
castor sugar

Method:

  1. Mix flour, sugar and salt.

  2. Beat egg and blend with melted butter and milk.

  3. Make a hollow in the flour and pour in mixture, a little at a time. Mix with flour to form a smooth batter. Allow to leaven for 2 - 3 hours.

  4. Grind finely roasted groundnuts.

  5. Pound roasted sesame seeds a little to enhance flavor.

  6. Leave butter in room temperature to soften.

  7. Heat small, flat pan. Over high fire, spread 1 ladleful batter evenly to cover whole surface. When crumpet is almost done, sprinkle 2 tsp each of groundnuts, sesame seeds and sugar.

  8. Place 1 tsp butter in centre and cover for 2 - 3 minutes.

  9. Remove from pan and fold into 2. Repeat until all batter is used up.
