chye sim (greens)
cooking oil
tomato sauce
light soy sauce
vinegar
water
eggs |

Method:
-
Bland noodles and
drain.

Cut greens into lengths of 5 cm/
2 ins.

Heat oil. Over high fire, put in
chye sim (greens), bean sprouts and noodles in
that order. Stir-fry quickly.

Add tomato sauce, light soy
sauce, vinegar and water. Mix well.

Crack in egg. scramble with
spatula and mix into noodles.
-
Add garnish as desired, except
those for sprinkling.

Add 1/2 ladleful gravy, 1 tbsp
squid gravy and chilly sauce to taste. Stir-fry
until noodles are dry. Remove to plate and
sprinkle the rest of the garnishes.
