Oyster Omelet Recipe
(Oh Chian - Teochew Style)

 

Ingredients
Main:
3 dozen
115 g/4 oz
455 ml/16 fl oz
1 tsp
1 tbsp
4 cloves
2 stalks
4 tbsp
4

Chili paste:
6
60 g/2 oz

oysters (small variety)
sweet potato flour
water
salt
rice wine (optional)
garlic
spring onions
cooking oil
eggs


dried chilies
dried prawns
 
 

 

 

 

Method:

  1. For convenience, prepare chili paste first, as follows:
    (a) Prepare dried chilies and dried prawns
    (b) Grind or pound together until smooth. There should be no trace of dried prawns.

  2. Shell oyster, rinse and put aside.

  3. Mix flour with water to form a thin paste. Add salt and rice wine (optional).

  4. Chop garlic and spring onions.

  5. Heat oil. Over high fire, pour in batter and quickly crack in eggs. Stir for a few seconds. Sprinkle chopped garlic and spring onions. Stir in chilly paste.

  6. Add oysters and partially cover with omelet. Serve.
     

Note: Divide into 2 portions and fry separately.
