South East Asian Seafood Curry Powder (A Mildly-hot Blend)

Ingredients

220 g
100 g
60 g
30 g
25 g
60 g
1 tsp

coriander seeds
dried chilies
cumin seeds
turmeric
peppercorns
fennel seeds
nutmeg powder

Method:

  1. Clean, roast the spices in a dry pan and pound or liquidize them to a fine powder. Cardamom powder is an ingredient in some Indonesian seafood recipes. Cinnamon powder is an ingredient in most Thai recipes.

  2. Mix thoroughly with nutmeg powder. Store in air tight container.


Note:
Cardamom, candlenuts, galangal, cinnamon, lemon grass and shrimp paste to be added during cooking.
