Indonesian Chicken Sambal Recipe

Ingredients:
 

1 kg

4 cm piece
2 cm piece
2 tbsp
1 tsp
125 ml

2 cm piece
1 tbsp
1 tbsp
1 1/2 tbsp
 

chicken, de-boned
large onion, ground
lemon grass, ground
galangal, ground
oil
cumin seeds, ground
coconut milk, thick
red chilies, ground
garlic, ground
fresh ginger, ground
coriander seeds, ground
lemon juice
tamarind pulp

Method:

  1. Cut chicken into narrow strips and rub with tamarind pulp dissolved in two tbsp of salted water.

  2. Combine all ground ingredients with lemon juice.

  3. Sauté chicken in heated oil until brown. Add more oil if necessary.

  4. Add spice mixture and coconut milk and allow to simmer until dry.
