Ingredients:

3/4 cup/6 oz/185 g
2 tsp/10 g
1/2 tsp/2.5 g
1/2 tsp/2.5 g
1 tsp/5 g

yellow split peas or
a mixture of yellow & green split peas
baking soda
oil for deep-frying
chili powder
ground coriander
pinch ground cinnamon
pinch ground cloves
salt

Method:
-
Place split peas
in a large bowl, cover with water, stir in
baking soda, and set aside to soak overnight.

Rinse split peas
under cold running water and drain thoroughly.
Set aside for at least 30 minutes, then spread
out on absorbent kitchen paper to dry. Heat
about 2 in/5 cm oil in a frying pan and cook
split peas in batches until golden. Using a
slotted spoon, remove peas and drain on
absorbent kitchen paper.

Transfer cooked
peas to a dish, sprinkle with chili powder,
coriander, cinnamon, cloves, and salt and toss
to coat. Allow peas to cool and store in an
airtight container.
