Indian Dahl Recipe

Ingredients:

1 cup/8 oz/250 g
4 cups/13/4 pints/1 liter
1 tsp/5 g
1 clove
2 tbsp/1 fl oz/30 ml
1
1 tsp/5 g
1/2 tsp/2.5 g
1 tsp/5 g
1/2 tsp/2.5g

brown or red lentils
water
ground turmeric
garlic, crushed
ghee or clarified butter
large onion, chopped
garam masala
ground ginger
ground coriander
cayenne pepper

Method:

  1. Wash lentils in cold water.

  2. Place lentils, water, turmeric, and garlic  in a large saucepan and bring to the boil. Reduce the heat, cover, and simmer, stirring occasionally, for 30 minutes or until lentils are cooked. Remove cover from pan, bring to the boil, and boil to reduce the liquid by at least half.

  3. Melt ghee or butter in a large frying pan, add onion, and cook for 5 minutes or until onion is soft. Stir in garam masala, ginger, coriander, and cayenne pepper and cook for 1 minutes. Stir spice mixture into lentils and serve immediately.

Serves 4
