Ingredients:

1 scant cup/61/2 oz/200 g

4 tsp/20 g

1/2 cup/2 oz/50 g
1/2 cup/2 oz/50 g
1/2 cup/2 oz/50 g
1 bunch/125 g/4 oz
2 tbsp/50 ml

mung beansprouts
cucumber, diced
grated fresh or shredded coconut
tomatoes, diced
chopped coriander, leaves
fresh chopped mint leaves
fresh chopped basil leaves
green onions (scallions), chopped
lemon juice
salt
freshly ground black pepper

Method:

  1. Place bean spouts, cucumbers, coconut, tomatoes, coriander, mint, basil, green onions (scallions), lemon juice in a bowl. Season to taste with salt and pepper and toss to combine. Cover and stand at room temperature for 2-3 hours before serving.

Serves 4
