Potato and Pea Bhajee Recipe

Ingredients:

3-4 tbsp
1
1 tsp/5 g
1 tsp/5 g
1/4 tsp/1.25 g
1
4 cups/1 lb/ 500g
1 cup/8 oz/250 g

oil
onion, thinly sliced
ground turmeric
cumin seeds
ground ginger
green chili pepper, seeded & diced
potatoes, peeled and diced
fresh or thawed frozen peas
chopped fresh coriander to garnish

Method:

  1. Heat oil in a Dutch oven (casserole), add onion and fry for 5-7 minutes, stirring frequently, until browned but not crisp.

  2. Stir in turmeric, cumin seeds, ginger, and chili pepper, then add potatoes and cook gently for 5 minutes, stirring frequently.

  3. Stir in peas. Cover casserole and simmer over very low heat for 15-20 minutes or until potatoes are tender but retain their shape. Garnish and serve.

Serves 4
