Marinade:
1 cup/8 oz/250 g
11/2 tsp/7.5 g
2 cloves
3 tsp/15 ml
1 tsp/5 g

1/2 cup/4 fl oz/125 ml

beef spare ribs
peanut oil
plain yogurt
grated fresh ginger
garlic, crushed
Tabasco
ground cumin
ground cardamom
finely chopped fresh coriander
few drops red food coloring
tamarind paste
water |

Method:
-
Trim meat of all visible fat and
set aside.
-
To make marinade, combine yogurt,
ginger, garlic, chili, cumin, cardamom,
coriander, and food coloring. Blend tamarind
paste with water and fold into yogurt mixture.
-
Rub marinade into
meat and set aside, covered, for at least 3
hours or overnight. Remove meat from marinade
and brush with oil. Broil or barbecue over
medium heat for 8-10 minutes, turning and
basting frequently with marinade.
