Tandoori Lamb Cutlets Recipe

Tandoori is favorite Indian way of cooking. Traditionally the food is cooked in a vat-shaped clay oven called a tandoor. This recipe uses the traditional spices and flavorings of the tandoori but the cutlets are broiled or barbecued.

Ingredients:

Marinade:
4 tbsp/60 ml
1 tsp/5 g
2 cloves
1 tbsp/15 ml
1 tsp/5 g
1/4 tsp/1.25 g
1/4 tsp/1.25 g
1/4 tsp/1.25 g
1 tbsp/15 g

lamb cutlets


plain yogurt
grated fresh ginger
garlic, crushed
lime juice
ground cumin
ground cardamom
chili powder
garam masala
finely chopped fresh coriander
few drops red food coloring

Method:

  1. Trim meat of all visible fat and set aside.

  2. To make marinade, combine yogurt, ginger, garlic, lime juice, cumin, cardamom, chili powder, garam masala, and coriander, Add enough red food coloring to turn the marinade pink.

  3. Rub marinade into meat and set aside, covered, for at least 3 hours or overnight. Remove meat from marinade and brush with oil. Broil or barbecue over medium heat for 8-10 minutes, turning and basting frequently with marinade.

Serves 4
