Ingredients

fish, about 11/2-2 lb (650-900 g) dressed weight, preferably porgy or sea bass or mackerel
salt
oil for deep-frying
margarine or vegetable oil
small onion, sliced
sambal ulek
laos
lemon grass
tamarind juice
pinch of ground ginger
brown sugar
sweet soy sauce
 

 

Method:

  1. Cut fish into serving portions and rub salt all over. Deep-fry and drain on absorbent paper.

  2. Heat oil and sauté sliced onion until lightly brown. Add sambal ulek, laos, lemon grass, tamarind juice, ginger, brown sugar and soy sauce. Heat thoroughly.

  3. Place fried fish in deep serving dish and pour sauce over it. Serve.
