Barbecue Duck (Bebek Panggang) Recipe

Ingredients:

1
2 tsp

Barbecue Sauce:
3 tbsp
2 tbsp
1/2 or more
2 tbsp

duckling, about 3 lb/ 1 1/4 kg
salt


sweet soy sauce
tamarind juice
red chili, crushed
vegetable oil
 

Method:

  1. Quarter ducking. Place in a heavy saucepan and add 1 tsp salt and 1 cup water. Cook over low heat for about 20 minutes. Remove ducking from stock.

  2. Separately, combine soy sauce, tamarind juice, chili, oil and 1 tsp salt.

  3. Baste duckling with this sauce and place quartered pieces on grill over red-hot, smokeless charcoal. Baste frequently. Cook until duckling is crisp and brown. Serve.
