Ingredients

cod steak or fillet
slices white bread
egg yolks, with egg whites reserved for later use
small onion, chopped finely
parsley
salt
breadcrumbs for coating
oil for deep-frying

Method:

Poach fish in 2 cups of water and then flake off flesh in
little bits.

Remove crust from bread and soften in 2 tbsp of water.
Gently pull bread apart into small pieces.

Mix fish with egg yolk, onion, parsley, pieces of bread and
salt. Roll mixture into balls about the size of apricots or
smaller.

Beat the egg whites until foamy. Dip balls in foamy egg
whites first and then roll in breadcrumbs.

Deep-fry until medium brown and drain on paper towels.
Serve.
