Indonesia is made up of many islands, including Java and Bali, each one has its own cuisine. There are influences from Indian and Chinese cooking, as well as from Holland and England. knives and forks are common use, and chopsticks are used only for stirring food. Food is cooked in woks, streamers and casseroles, with the ingredients being finely chopped beforehand. The Javanese dish nasi goreng and the sumptuous Indonesian rijsttafel are typical, well-known specialties. Fish abounds in the seas around Indonesia and is an extremely popular food. Moreover, virtually all the spices in the world flourish on the islands of Indonesia, and cooks like to make lavish use of them. The aromas of their dishes are correspondingly varied. Sambals, more or less pungent spice pastes based on peppers or chilies, are particularly popular. Palm sugar, coconut milk and sour flavorings such as tamarind paste and lemon grass serve to reduce the heat. Subtle aromas are provided by ingredients such as galingale, ginger, cloves, cinnamon, turmeric, garlic, cumin, coriander and various types of soy sauce as well as peanut and shrimp paste. Spices are often ground to a thick paste with a pestle and mortar.
