garlic, chopped finely
candlenuts, grated
coriander
pinch of cumin
pinch of ginger
red chilies, crushed

tamarind juice

coconut milk from 1/2 coconut

Method:

Combine beef with
onion and garlic. add candlenuts and then
coriander, cumin, ginger, chilies, lemon grass,
tamarind juice and salt. mix well.

Heat oil in a pan and fry beef
and spices until medium brown. Add coconut milk.
Simmer until almost dry.

Cut out 7 in x 7 in (18 cm x 18
cm) aluminum foil squares. On each square, place
a slice of egg and then cover with a heaped
tablespoonful of bee mixture. Wrap meat in foil
and seal ends.

Steam in a double boiler for
about 1 hour. Serve.
Note:
As a variation, substitute either shrimp, veal,
chicken or fish (cod is excellent) for beef. In
Indonesia, bebotok is wrapped in banana leaves. If
you prefer a natural substitute, however, use
cabbage leaves instead of foil. The result is a form
of Indonesian stuffed cabbage.
