coriander
pinch of cumin
ground black pepper
coconut, desiccated or freshly grated
vegetable oil
coconut milk from 1/4 coconut
lemon grass
lime leaves
salt

Method:
-
Remove chicken
meat from breast bone and chop into fine pieces.

Separately, sauté coriander,
cumin, black pepper and grated coconut in
vegetable oil until coconut starts to brown.

Now add chicken meat to mixture
and stir well. After this add coconut milk,
lemon grass, lime leaves and salt. Cook
uncovered until almost dry, stirring
occasionally. Serve.
