egg yolks, reserving egg whites
garlic, chopped finely
scallion, chopped finely
parsley, chopped
lemon grass
pinch of ginger
coriander
salt
red chilies
breadcrumbs
vegetable oil for deep-frying

Method:

Knead beef with
egg yolk and then with garlic and scallion. Add,
one at a time, parsley, lemon grass, ginger,
coriander and salt. Set aside.

Slit chilies lengthwise, remove
seeds and stuff with beef. Then beat egg whites
until foamy and coat the top of beef. Sprinkle
with breadcrumbs and deep-fry. Drain on
absorbent paper towels. Serve.
