small onion, copped
cloves garlic, chopped
vegetable oil
pinch of cumin
coriander
red chili, crushed
lemon grass
salt
lime leaves
shrimp paste
coconut milk from 1 coconut

Method:

Wash rice twice in cold tap water, drain and set aside.

Sauté chopped onion and garlic in oil. Add cumin, coriander,
crushed red chili, lemon grass and salt. Stir well.

Now add in the rice and stir continuously until thoroughly
mixed with spicy ingredients. Add lime leaves and shrimp paste.

Cook the mixture in coconut milk according to the directions
for making plain white rice.

This nasi ulam dish may be garnished with fried onion, peeled and
sliced cucumber, an egg omelets cut into strip, or handful of
fried peanuts.
