Shredded Chicken (Ayam Abon-abon) Recipe

Ingredients:

1
1/2 tsp
1/2 tsp
2 tbsp
1 tsp
2 tbsp
 

large chicken breast, about 1 lb/ 450 g
ground coriander
ground laos
tamarind juice
salt
vegetable oil

Method:

  1. Place chicken breast in saucepan and cook for 20 minutes until tender. Remove from stock. Cool and shred meat from breast bone.

  2. Place chicken in bowl and add coriander, laos, tamarind juice and salt. Mix thoroughly.

  3. Now fry chicken in vegetable oil in a heavy skillet, stirring frequently until meat is dry and crisp. Serve as a rijsttafel garnish.
