1

3 tbsp
1/2 tsp

broiler or fryer
salt
vegetables oil or margarine
medium onion, chopped finely
pinch of nutmeg, grated
sweet soy sauce
tamarind juice

Method:

  1. Cut chicken into serving portions. Wash thoroughly. Rub thoroughly with salt and let chicken stand for about 10 minutes.

  2. Heat oil in a large, heavy frying pan with a tight-fitting cover. Then add chicken and fry until light brown, stirring frequently to prevent it from sticking to the pan.

  3. Combine onion with chicken and fry until onion turns mellow brown.

  4. Then add nutmeg, soy sauce and tamarind juice, stirring well. Fry the mixture for about 20 minutes. Add 1 cup water, cover and simmer over low heat from 20 to 30 minutes. Serve.
