Ingredients: |

vegetable oil for frying
large onion, sliced thinly
margarine
garlic, chopped
peppercorns
pinch of turmeric
pinch of chopped ginger
thin egg noodles or mung bean noodles
finely chopped scallion, reserving both bulb and
shoot
bean sprouts, washed and cleaned |

Method:

Cut chicken into
small pieces and marinate in mixture of garlic,
pepper, lemon grass, coriander, shrimp paste,
soy sauce, tamarind juice and salt. Leave for at
least 30 minutes.

Heat oil in a heavy skillet,
then fry the chicken uncovered until deep golden
brown. Stir constantly so that the chicken does
not stick to the pan. If necessary, a small
amount of water may be used for this purpose.
Serve immediately.
