Ingredients:
1 whole,1-2 lb /450-900 g

Sweet & Sour Sauce:
2 tsp
3 tsp
1 tbsp
1/4 cup
1/2 cup
4 tbsp
fish, preferably porgy, sea bass,
carp or gurami
salt
egg
flour
oil for deep-frying
soy sauce
cornstarch mixed with 4 tbsp water
tomato ketchup
vinegar
water
sugar
Method:
Scale fish with
dull knife, removing the insides. Wash well.
Make two diagonal slashes on both sides. rub
fish with salt.
Mix egg with flour and rub over
fish, both inside and out.
Heat oil and deep-fry till brown.
Remove from oil and drain. Place on an oval
platter and keep warm.
Bring all ingredients making up
Sweet & Sour Sauce to a boil, stirring
constantly, and pour over fish just before
serving.
Garnish fish with shredded
carrots or bits of pineapple. Tomatoes and
capsicums may also be used for garnishing. They
may be fried lightly before serving.
