medium onion, sliced thinly

candlenuts, grated
pinch of lemon grass
coconut milk from 1 coconut
tamarind juice
Method:
Cut chicken into
serving portions. Wash thoroughly. Rub
thoroughly with mixture of coriander, loas and
salt.
Fry chicken in
oil until medium brown. Add turmeric and fry an
additional 2 minutes. Add onion and garlic and
fry for a further 1 minute. Add candlenuts
together with lemon grass and stir well. Finally
add coconut milk and tamarind juice and simmer
over low heat for about 30 to 45 minutes. Serve.
